Spicy Chorizo Pasta Bake

  • 500g pasta (short)
  • 1 onion, diced
  • 1 pepper, diced
  • 1 courgette, sliced
  • 1tsp. smoked paprika
  • 1tsp. mixed herbs
  • Splash balsamic vinegar
  • 100g chorizo
  • Ball mozzarella
  1. Preheat oven to 180C, 350F, gas mark 4.
  2. Cook pasta as per packet guidelines.
  3. Fry onions, courgette and pepper then add sliced chorizo with smoked paprika and extra chilli if you like it spicy.
  4. Add in chopped tomatoes and splash of balsamic vinegar and mixed herbs. Cook until reduced then mix in the cooked pasta.
  5. Transfer to an oven proof dish and push pieces of mozzarella into the bake and on the top.
  6. Cook until golden and bubbling then tuck in! Any leftovers keep well for lunch the next day.
